1. Ensure no prefix "user:" simply deletes "user:" key label and grabs the pair name & age and stores in field [UserInfo]

Correct

2. Is there a way to preview what "each" step is doing for n00b like me to figure what's happening ? I assume because it's a file object ? I tried a small experiment with below , but cannot see the output  

Yes there is way.

 

3. When I try to run this I get an output saying below. I tried removing check box of removing log files , but still error 

Grant yourslef more user rights or chage log file location

Thank you for this , and also being patient with me

I can see the output now from single JSON properly , it really helps in understanding the output.

I am still not able to understand the role of unpivot here in this scenario.

The UnPrivot creates one row per order, ottherwise you will get a very vide file wit just one line

FYI: We have made some minor tweaks in the latest release so it is no longer necessary to use Ensure no prefix
