Change sender email address for each connection

Is there a system variable, or action variable that can be changed during the execution of a package that defines the "Email from:" address?

At the moment, we can only find the global settings in File > Options

As part of a couple of business processes, we'd like to change the email-from/reply-to address so that any return emails can be picked up from the right account e.g.

customersupport@...
accounts@...
sales@...
